What does it look like in practice ?
Demonstration is the bridge between evidence and scale (scroll down for the visualisation).
In the context of public food procurement, demonstration means: Real institutions and programs changing how they buy and serve food ; Real suppliers participating in new or expanded markets ; Clear health, environmental, economic and equity outcomes being measured ; and Learning that informs policy reform and wider rollout
Demonstration may include:

Regional procurement projects linking institutions and programs with local and small and medium suppliers

Menu and purchasing transformation in hospitals, residential aged care or long day care to match regional supply chains and production, prioritising sustainable healthy food.

New coordination models that reduce barriers for SME and Indigenous suppliers
Demonstration de‑risks reform, builds confidence and shows what is possible before change is embedded at scale. Ideally demonstration occurs concurrently with policy changes. Click on the image to open a PDF.
